THAI CHICKEN CURRY SOUP
SLOW COOKER
INGREDIENTS
1.5kg Chicken breast fillet (cut into large chunks or whole)
2 x Cans coconut milk
4 Tblsp red curry paste
4 Tblsp Oyster sauce
6 Tblsp lime juice
4 cloves garlic
2 x chicken stock cubes dissolved in 1/2 cup water
1 tsp ginger
chilli / cayenne pepper to taste
1 x Red capsicum
2 x Brown onion
METHOD
Add all ingredients to slow cooker. Cook on low for 4 - 5 hours.
