PULLED PORK CARNITAS
INGREDIENTS
2 kg Pork shoulder (boneless if possible)
¾ cup juice from oranges (approx. 2 oranges)
RUB
1 Tablespoon dried oregano
2 teaspoons ground cumin
2 ½ teaspoons salt
1 teaspoons black pepper
1 flat teaspoon cayenne pepper
5 cloves garlic (minced or grated)
1 Tablespoon olive oil

INSTRUCTIONS
- Spray the slow cooker dish with olive oil
- Mix the rub ingredients together in a bowl
- Trim the large pieces of fat or rind from the meat. There will be some small pieces of fat left which is fine.
- Place the meat in the slow cooker starting off on high
- Spread the rub mixture over the meat
- Carefully pour the orange juice over the meat
- Turn slow cooker to low and cook for 8 hours
- Using 2 forks, start to pull the meat apart and stir through the juices
