QUICK & EASY FOCACCIA

3 cups strong flour
2
¼ teaspoons instant yeast
¾ tablespoon sugar
1
½ cups warm water
4 tablespoons olive oil

(1) Mix flour, yeast, sugar, water and 2 tablespoons of the oil until all ingredients are well combined. You can also add a teaspoon of rosemary and a little garlic if you like.

(2) Place the dough in a well oiled bowl and sit in a warm place for 30 minutes to rise. It helps to cover the bowl with a damp kitchen towel.

(3) Preheat
oven to 180℃

(4) Place the dough on an oiled baking sheet and press your fingers into the dough leaving lots of indents for the oil to settle into.

(5) Pour the remaining 2 tablespoons of oil over the top of the dough and sprinkle with salt.

Bake for 30 - 35 minutes until the dough just starts to turn slightly golden.
